Homemade Chicken Pot Pie

Ooooh I'm on a ROLL! Another recipe The Pioneer Woman made me just swoon over is this amazing chicken pot pie made with puff pastry dough. I didn't take many pictures during the process because I was cleaning the kitchen and making Corbin's breakfast for tomorrow. BUT! I took a few.

Right after I put it in the oven....



I did stray a bit from the recipe. I had an extra piece of puff pastry so I put it in the bottom of the dish. Oh I also did one big pie instead of four small ones since it's just the two of us. I baked the pastry dough before filling it for about ten minutes so it wouldn't be gummy.



It was VERY hard to serve so hindsight and all, I would have made it into the 4 ramekin thing that the recipe suggested. Despite the crappy presentation, which I refuse to show, Corbin wolfed it down and I must admit it tasted delish!!
